Infused White Honey

Ingredients:

  • 3 jars of White Honey
  • Cinnamon stick, star anise whole cloves
  • Vanilla bean, dried lavender flowers
  • Dried rosemary, dried sage, dried thyme

To infuse honey: Fill a clean jar quarter full with herbs and spices. Top with honey, stir, and cap with a tight-fitting lid. Place in a sunny windowsill, and turn the jar over once per day for about a week.

For Spiced Honey: Add a cinnamon stick, 2-3 star anise, and 5 whole cloves to a clean jar. Pour honey over the top, then close the lid tightly. Place in a sunny windowsill, and turn over once per day for about a week. Continue to infuse until desired flavor has been reached, then strain honey using a fine sieve into another jar.

For Vanilla Lavender Honey: Add 2-3 Tablespoons of dried lavender flowers. Use a real vanilla bean for ultimate flavor. Split the bean, and then scrape the seeds into the jar. Add the rest of the bean too – it still has plenty of flavor! Pour honey over the top, then close the lid tightly. Place in a sunny windowsill, and turn over once per day for about a week. Continue to infuse until desired flavor has been reached, then strain honey using a fine sieve into another jar.

For Savory Honey: Add 2-3 teaspoons each of dried rosemary, dried thyme, and dried sage. Pour honey over the top, then close the lid tightly.
