All honey crystallizes. Crystallization is a natural sign that honey is genuinely raw and unprocessed. Commercial honey is often heated to slow this process, but that heating destroys beneficial enzymes and nutrients. Heavenly Organics does not heat the honey, so crystallization may occur — it does not affect quality and the honey can be gently warmed to re-liquefy it.
